This is the perfect meal for the week of Halloween or really any evening in Fall. I'll be the first to admit it's still a little warm out to fully enjoy chili and cornbread, but the good news is the recipe I make is a crock pot special...so it requires very little time in the kitchen.
Chili Mixture:
1/2 white onion, chopped
1 lb lean ground beef
2 teaspoons chili powder
1 teaspoon salt
1 (16 ounces) can refried beans
1 (15 ounces) can chili beans
*I used Bush's grilling' beans, bourbon and brown sugar
1 (10 ounce) can diced fire roasted tomatoes
1/2 cup tomato sauce
Directions:
Mix all of the ingredients together in the crock pot.
Set on high for 5 hours.

5 hours (crock pot time)
Trader Joe's knew what they were doing when they started selling a PUMPKIN cornbread mix. Yes, you read that right...Pumpkin cornbread. Simply pick up a box and follow the instructions. I always opt for muffins instead of a traditional loaf, the leftovers make a nice portable snack for the babes.
